SICHUAN CHILLI CHICKEN
Sichuan pepper is known for its unique and interesting flavour. It comes with a tanginess that’s close to a lemon. If a spicy chicken dish tops your culinary must-have list, then this dish is a must-try.
Preparation time: 20 minutes (Serves 2)
Ingredients:
• 8 chicken thighs
• (deboned, de-skinned, sliced into 1-inch chunks)
• 1 tsp crushed Sichuan pepper (optional)
• 1 heaped tsp Chinese five spice powder
• 1 inch fresh ginger (minced)
• 2 red chillies (fresh chopped)
• 1 pinch white pepper powder
• 4 spring onions (chopped)
• 3 cloves garlic (minced)
• 1 tbsp dark vinegar
• 2 tbsp corn starch
• 2 tbsp dark soy
• 2 tbsp oil
• ½ cup chicken stock
Sea salt as required (grounded)
Preparation:
• Marinate the chicken with spices and seasoning
• Coat it with corn starch
• Heat a wok and add oil
• Toss garlic, ginger, chillies and peppers (optional)
• Add the chicken pieces and stir-fry
• De-glaze the chicken with vinegar
• Continue to dry fry the chicken by adding ½ cup chicken stock
• Add chillies, spring onions and soya sauce
• Put the lid on the wok and reduce the heat
• Stir well in between
• Remove the lid after 3-4 minutes
• Add Sichuan pepper, salt and white pepper powder
• Serve with lime wedges
