KADHAI KEBAB SLIDERS
This recipe brings together the best of two worlds, America and the Middle East. Kebabs are inspired from the Middle Eastern cuisine and sliders(an American term for a small sandwich) are inspired from the American cuisine.
Preparation time: 40 minutes (Serves 3)
For Kebabs
Ingredients:
• 300 gms mutton morsels
• 1 tsp garam masala
• 1 tsp red chilli flakes
• 1 tsp cumin powder
• 2 tsp coriander crushed
• 1 tbsp tomato paste
• 2 tbsp fried onion paste
• 1 tsp dried fenugreek leaves
• 1 tbsp fresh coriander leaves
• 1 tbsp mint leaves
• 3 tbsp gram flour roasted
• ½ cup breadcrumbs
• 2 tbsp oil
Salt as required
Preparation:
• Wash the lamb and drain thoroughly before mincing it
• Combine all the spices (garam masala, red chilli flakes,coriander crushed), tomato paste, nion paste, dried fenugreek leaves, and salt in a large bowl. Mix well. Place it in the refrigerator for 3 hours
• To the marinated meat, add the coriander and mint leaves and mix well
• Add the gram flour to achieve the desired consistency
• Slice the cucumber and toss all the salad ingredients together
• Shape the mince into flat circular-shaped kebabs
• Heat the grill, brush with oil and grill the kebabs
• Serve immediately with green chutney
For Salad
Ingredients
• 1 cucumber (big, with skin)
• 1 tsp hoisin sauce
• 2 tsp sherry vinegar
• 2 tsp soya dark
• 2 tsp honey
• ½ scallions (finely chopped)
• 2 tbsp coriander (finely chopped)
