POLLO CACCIATORE
Cacciatore means anything cooked in hunter-style. A typical ‘Alla Cacciatore’ uses red or white wine and is often served with bread or pasta.
Preparation time: 40 minutes (Serves 2)
Ingredients:
• 1 chicken (cut into 8 pieces)
• 4 cloves of garlic
• 1 green capsicum (diced)
• 2 onions (diced)
• 1 stalk celery (diced)
• 1 bunch of cilantro (chopped)
• ½ cup olive oil
• 2 bay leaves
• 1 stalk rosemary
• 1 cup refined flour
• 6 black pepper corns
• Old red dry house wine
• 5 canned tomatoes
• Salt as required
Preparation:
• Rub the chicken with some garlic paste, olive oil and salt
• Dredge with seasoned flour
• Heat oil in casserole with lid
• Add bay leaves, rosemary, carrot, peppers, onion and celery
• Sauté for 3-4 minutes
• Add chicken and cook till it starts browning
• Add the red wine and stir continuously
• Add tomatoes and let it simmer
• Cover and simmer
• Finish with fresh herbs
