    THAI CRÈME CARAMEL

     

    Crème Caramel is one of the most popular desserts across the world. In this recipe, we enhance the overall flavour and give it a spicy kick with some chillies.

     

    Preparation time: 45 minutes (Serves 2)

    For Caramel

    Ingredients:

           ¾ cup sugar

           2 tbsp water

           1 Thai red chilli

    Salt as required 

    Preparation:

           In a saucepan, cook sugar and other ingredients to make caramel. Evenly distribute in moulds 

    For Crème Pudding 

    Ingredients:

           ¼ cup sugar

           1 tsp vanilla extract

           2 cups milk

           3 eggs (beaten)

           Kaffir lime leaves

           1 stalk lemon grass (chopped)

           ½ condensed milk 

    For Crème Caramel 

    Preparation:

           Add sugar and vanilla extract to the hot milk

           Stir until the sugar has dissolved

           Beat the eggs in a bowl

           Whisk it in the hot liquid

           Heat Kaffir lime leaves and lemon grass in ½ cup water

           Reduce and strain

           Mix it with condensed milk

           Mix this into the crème pudding liquid

           Pour into the caramel-lined moulds

           Prepare a water bath and place the moulds

           Bake for about 40 minutes at 165ºC

           Remove it from the oven

           Refrigerate, invert and serve cold
