BURNT MISO WHITE CHOCOLATE FILLED MODAK
Miso is a traditional Japanese sauce that adds a brilliant umami flavour to any dish. In this recipe, we add some umami magic to the traditional modak filling.
Preparation time: 40 minutes (Serves 2)
For Modak
Ingredients:
• 2 cups of rice flour
• 2 tbsp refined flour
• Hot water
• 1 tbsp ghee
Salt as required
Preparation:
• Mix the rice flour and refined flour and sieve
• Boil water and add a pinch of salt and ghee
• Pour over the flour and knead
• Cover with a damp cloth and keep aside for 10 minutes
• Make small balls, make a dent and fill it with the filling
• Seal with the modak maker or flute with your hands
• Steam for 10 minutes
For Modak Filling
Ingredients:
• 5 tbsp fresh coconut (grated)
• 1 tsp poppy seeds
• ⅓ tsp cardamom powder
• 1 tbsp crushed toasted cashew nuts
• 2 tsp miso
• 6 tbsp white chocolate
Preparation:
• Cook miso and white chocolate on a slow flame until it caramelises
• Mix with coconut, cardamom powder, poppy seeds, cashews and spices
