PATRON XO COFFEE KULFI
A dessert popular since the Mughal era, kulfi brings a smile to any summer-worn face. A dash of the famed tequila concoction brings in a fine flavour to this favourite confection.
Preparation time: 80 minutes (Serves 4)
Ingredients:
• 1 ltr milk
• 4 tbsp coffee extract
• 1 tin condensed milk
• 4 tbsp pistachios (blanched and chopped)
• ¼ tsp cinnamon powder
• 30 ml patron coffee liquor or 1 tbsp instant coffee
Salt as required
Preparation:
• Reduce some milk in a kadhai for 15 minutes
• Dip the condensed milk tin in boiling water for 45 minutes
• Allow it to rest and cool
• Add the caramalised condensed milk to the reduced milk
• Add the cinnamon powder, salt, coffee extract and give a boil
• Stir in the nuts
• Allow the mixture to come to room temperature
• Fill into the kulfi moulds and freeze
