MANGO AVOCADO GUACAMOLE
Developed in Mexico and a favourite around the world, guacamole literally translates to ‘Avocado Sauce’. The use of mango in this recipe adds a fresh and seasonal twist to this classic sauce.
Preparation time: 30 minutes (Serves 2)
Ingredients:
• 1 ripe avocado flesh
• 1 ripe mango flesh
• ½ clove garlic (minced) (optional)
• 1 tsp cumin powder (roasted)
• 1 tbsp coriander leaves (chopped)
• 1 tsp coriander stem (chopped)
• 1 tbsp parsley or chopped mint
• ½ tsp red chilli powder
• 2 jalapeño (chopped)
• 1 lime
• 1 tbsp olive oil (first press)
• Salt as required
Preparation:
• Dice and marinate flesh of the avocado and mango by adding herbs, chillies, spice and salt
• Muddle the fruits lightly in a mortar
• Finish with a drizzle of oil
• Serve with corn chips/crackers
