CHICKEN CAFREAL
Chicken cafreal is a popular, spicy chicken dish from Goa. Its Portuguese influence is reflected in its flavours. It typically uses whole chicken legs, served with lemon and potato wedges.
Preparation time: 20 minutes (Serves 2)
For Cafreal
Ingredients:
• 2 tsp chilli powder
• 6 chicken drumsticks
• 1 ginger (chopped)
• 6 cloves garlic (chopped)
• 1 cup fresh coriander leaves (chopped)
• 2 spring onions (chopped white and green part)
• 2 sticks cinnamon
• 2 tsp cloves
• 2 tsp pepper
• 2 tsp cumin
• 2 tsp coriander seeds
• 2 onions (chopped)
• 8 green chillies
• 4 tbsp Goan vinegar
• 2 tbsp sugar
• ½ tsp turmeric
• 4 tsp refined oil
• Salt as required
For Cafreal Masala
Preparation:
• Add cinnamon, cloves, pepper, cumin and coriander seeds in a preheated pan
• Roast them all together and transfer them to a grinder
• Add ginger, garlic, coriander leaves and spring onions to the grinder
• Dry roast the green chillies in a pan and transfer them to the grinder
• Now add the Goan vinegar, sugar and chopped coriander leaves with little and grind to a paste
Preparation:
• Clean the chicken and strain it in a colander
• Rub the chicken drumsticks with the Cafreal masala
• Leave in the rub for 30 minutes
• Heat some oil in a kadhai, add chopped onions and turmeric, fry them well
• Transfer it to a platter
• Add some oil in the kadhai again and place the marinated chicken in it
• Cover the kadhai with lid and cook
• Stir in between with slotted turner
• Add the fried onion back to the pan and mix it well
• Alternatively, you could make a thicker marinade and cook the chicken on a grill
• Serve hot
