SHAWARMA OF CHICKEN
Shawarma is one of the most popular street foods in the world. This Arab meat preparation comes from the Levant region or the Eastern Mediterranean region. The Shawarma style of cooking was developed in the 19th century in Ottoman Turkey. It is prepared by stacking thin cuts of meat on a rotating vertical rotisserie and served with pita or bread wrap.
Preparation time: 40 minutes (Serves 2)
For Shawarma
Ingredients:
• 8 thighs of chicken
• For 1st Marinade
• Ingredients:
• ¼ cup malt vinegar
• ¼ cup plain yoghurt
• 1 tbsp vegetable oil
• ¼ tsp freshly ground cardamom
• 1 tsp all spice powder
• White pepper as required
• Salt as required
For 2nd Marinade
Ingredients:
• ½ cup tahini
• ¼ cup plain yoghurt
• ½ tsp minced garlic
• 2 tbsp lime juice
• 1 tbsp olive oil
• 1 tbsp chopped fresh parsley
• Salt as required
Preparation:
• Mix the malt vinegar, yoghurt, oil, salt and pepper in a baking dish
• Place the deboned chicken thighs into the mixture
• Cover and let it rest for 2-3 hours
• Pre-heat the oven at 170ºC
• Mix the tahini, yoghurt, garlic, lime juice, olive oil and parsley in a small bowl
• Season with salt and pepper
• Cover the chicken and bake in the 2nd marinade for 30 minutes, turn in between
• Uncover, and cook for an additional 5 minutes till the chicken is cooked
• Remove from the dish and cut into slices
• Place the sliced chicken, tomatoes, onion and
• lettuce on the pita breads
• Place a dollop of tahini

Ingredients:
• 2 medium tomatoes (thinly sliced)
• ½ cup onion (sliced)
• 4 cups lettuce (shredded)
• 2 pita bread rounds
