PAELLA VALENCIANA
Considered as Spain’s national dish and a traditional Valencian dish, Paella is a rice dish that’s available in several variations, seafood being one of the most common.
Preparation time: 40 minutes (Serves 2)
Ingredients:
• 5 tbsp olive oil
• 1 red bell pepper (cut in cubes)
• 120 gms fish (any sea fish)
• 160 gms shrimps
• 120 gms clams
• 120 gms mussels
• 1 tsp sweet paprika
• 2 cups short grain rice
• ½ cup red beans boiled
• 3 tbsp parsley (chopped)
• 6 garlic cloves (minced)
• 1 onion (chopped)
• 4 ltrs chicken stock
• ½ cup tomato paste
• 1 green beans
• 1 gm saffron
• 1 cup white wine
• 4 bay leaves
• 10 sprigs thyme
• Basil leaves
• Pepper as required
• Salt as required
Preparation:
• Heat some olive oil and add garlic, onions, bay leaves and thyme
• Add the rice and white wine
• Stir till its coated with fat for about 5 minutes
• Add pepper, tomatoes, beans and shellfish
• Add chicken stock, saffron and seasoning
• Stir for 5 minutes and cover with a lid
• Cook for 10 minutes
• Garnish with fresh herbs
