LAAL MAANS
Laal Maans is a favourite amongst the royalty of Rajasthan. It was traditionally prepared with game meat. Special mathania chillies were used to mask the odour of the fresh meat.
Preparation time: 40 minutes (Serves 2)
Ingredients:
• 350 gms lamb curry (cut with bone)
• 2 tsp kachri (for tenderising)
• 15 red mathania chillies
• 2 tsp whole coriander seeds
• ¼ cup ginger-garlic paste
• 4 pods green cardamom
• 1 pod black cardamom
• 2 onions (chopped)
• 2 tsp cumin seeds
• 1 cup mustard oil
• 10 garlic cloves
• 1 cinnamon stick
• 1 mace
• 2 tbsp coriander leaves
• ½ cup yoghurt
• Black pepper as required
• Salt as required
Preparation:
• Dry roast the red chillies
• Grind cumin and coriander seeds into a powder
• Mix this powdered spice-mix with the yoghurt
• Make a paste with the kachri powder (marination)
• Marinate the lamb with this marinade for 2 hours
• Heat some mustard oil
• Add onions and sauté till golden brown
• Add the whole spices and sauté the ginger-garlic paste
• Add the lamb and sauté for 10 more minutes
• Add water and seal cover it
• Let it simmer on a slow fire for 50 minutes
• Adjust the seasoning
• Serve with bajra roti
