RAAJ KACHORI WITH EDAMAME BEAN SPROUTS & GREEK YOGHURT
An iconic chaat, the Raaj Kachori is aptly called the king of kachoris. In this recipe, we give an oriental twist with the use of edamame, tender green and soybeans. The flavour is balanced beautifully with flavoured Greek yoghurt.
Preparation time: 15 minutes (Serves 4)
For Kachori
Ingredients:
• 4 raj kachoris
• 1 cup beans sprout
• ½ cup soaked soybean or green edamame
• 1 onion (chopped fine)
• 1 tomato (chopped fine)
• 2 tbsp coriander leaves (chopped)
• 1 green chilli (chopped fine)
• 1 lime
Preparation:
• Crack open the kachori
• Mix all the vegetables and beans in a bowl
• Fill in the kachori till half
• Top it up with yoghurt
• Garnish with edamame, sprouts, coriander leaves and sev
For Flavoured Yoghurt
Ingredients:
• 1 cup greek yoghurt
• 1 tbsp cumin powder (roasted)
• ½ tsp Kashmiri laal mirch powder
• 1 /3 tsp dry ginger powder
• ½ tsp dry mango powder
• 2 tsp sugar syrup
• Mineral/black salt as required
Preparation:
• In a bowl, whisk yoghurt together with all the spices,
salt and sugar
For Garnish

• Coriander sprigs
• Sev (barik)
• Edamame beans sprout
