Cheese and herb waffles with chilli-fried eggs

Ingredients
WAFFLES
• 120g refined flour
• 2 tsp baking powder
• ½ tsp baking soda
• 1 tbsp refined sugar
• 100g melted butter
• 2 eggs
• 240ml buttermilk
• 50g grated cheddar cheese
• 2 tbsp finely chopped chives
• 2 tbsp finely chopped parsley
EGGS
• 3 tbsp olive oil
• 4 eggs
• 2-4 red chillies, deseeded and thinly sliced
• 4 tbsp dill fronds
• 1 tbsp chilli oil
Method
1. Heat the Micasa Stovetop Waffle Maker over a medium flame.
2. Combine the first 4 ingredients in a bowl and season.
3. Whisk the butter, eggs and buttermilk, pour into the dry mix and stir to combine. Mix in the cheddar, chives and parsley.
4. Pour a ladleful into the waffle maker. Cook for 5 minutes on each side, or until the edges are crisp and golden. Transfer to a plat and keep warm while you cook the remaining batter.
5. Fry the eggs in the olive oil – just as the whites set, sprinkle over the chilli and dill. Drizzle with the chilli oil and serve with the waffles.
