MINESTRONE HINTED WITH SEA VEGETABLES
Milanese is one of the most popular Italian soups. This soup is a version of the Minestrone and is traditionally made with rice instead of pasta.
Preparation time: 30 minutes (Serves 2)
Ingredients:
• ½ cup tomatoes (blanched and crushed)
• 1 carrot (diced)
• 3 garlic clove (minced)
• 1 small onion (diced)
• 10 green beans (diced)
• 6 baby corn (diced
• ½ zucchini (diced)
• 1 tsp oregano
• 2 sprigs fresh basil
• ½ cup pasta (macaroni or pasta)
• 2 tbsp parmesan cheese (grated)
• 2 tbsp olive oil
• 4 black pepper (cracked)
• 1 tsp sugar
Salt as required
Preparation:
• Heat olive oil, sauté onion, garlic and all the vegetables for 2 minutes on medium heat
• Add oregano (optional)
• Add 8 cups of water and let it simmer for 5 minutes
• Add pasta and let it simmer for the next 7-8 minutes. Remove from heat
• Add basil in soup cups
• Pour the soup in the cups
• Sprinkle parmesan cheese, drizzle olive oil and sprinkle cracked pepper. Serve hot
