DULCE LECHE FILLED CHURROS
Churros is a fried dough pastry that’s hugely popular in Spain and Portugal. In this recipe, we combine it with another Latin American classic, ‘dulce de leche’.
Preparation time: 40 minutes (Serves 2)
Ingredients:
• 1 can condensed milk (200ml)
• 1 cup castor sugar
• 2 tsp cinnamon (ground)
• 1 cup water
• 2 ½ tbsp white sugar
• 2 tbsp vegetable oil
• 1 cup all-purpose flour
• 2 quarts oil for frying
• ½ cup white sugar (or to taste)
• 1 tsp ground cinnamon
• ½ tsp salt
Preparation:
• Boil the condensed milk in water for three hours and let it chill
• In a small saucepan, over medium heat, combine water, 2 ½ tbsp sugar, salt and 2 tbsp vegetable oil
• Bring to a boil and remove from heat
• Stir in flour until mixture forms a ball
• Heat oil for frying in a deep-fryer or deep skillet to 375ºF (190ºC)
• Pipe strips of dough into hot oil using a pastry bag
• Fry until golden
• Drain on paper towels
• With a small nozzle and a piping bag, stuff the dulce de leche in the churros from one side
• Combine ½ cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture churros in cinnamon and sugar mixture
