ROASTED PINEAPPLE UPSIDE DOWN CLASSIC CAKE
The roasted pineapple upside down cake is an American classic. This simple yet stunning recipe will never go out of style. A taste riot in every bite, this dessert is perfect for any occasion.
Preparation time: 55 minutes (Serves 4)
Ingredients:
• 1 cup refined flour
• 1 cup sugar grain
• ½ cup butter
• 1½ tsp baking powder
• ½ tsp vanilla extract
• ¾ cup milk
• 1 tbsp flax seed powder soaked in ½ cup milk
• ½ tsp salt
Preparation:
• Heat the oven to 160ºC
• In a baking tin, melt some butter in the oven
• Sprinkle brown sugar evenly over the melted butter
• Lightly char some pineapple slices on a live coal
• Arrange these slices over the brown sugar
• Place a cherry in the centre of each pineapple slice
• In a bowl, beat the butter and sugar together
• Add flaxseed slurry, milk and beat
• Now add the vanilla extract and the dry ingredients
• Pour batter over the lined tray
• Bake for 45 minutes
• Check by inserting a knife, it should come out clean

• 9 pineapple slices (drained)
• 9 cherries
