ILISH MACHER JHOL
Ilish or Hilsa is known as the queen of fishes in bengal. For fish lovers here, a monsoon without ilish is unthinkable.
Preparation time: 40 minutes (Serves 2)
Ingredients:
• 1 medium Hilsa (Ilish fish)
• 1 potato (cubes)
• 3 tsp turmeric powder
• 1 tsp coriander powder
• 1 tsp cumin powder
• 6 tbsp mustard oil
• 1 onion (wet ground)
• 3 cloves of garlic (wet ground)
• 30 gms ginger (wet ground)
• 1 tbsp fresh coriander
• 1 lime (cut into wedges)
Salt as required
Preparation:
• Clean the fish with water and pat dry
• Marinate fish pieces with salt and turmeric
• Heat some mustard oil in a kadhai
• Fry fish pieces and set aside
• In the same oil, fry cubes of vegetables and set aside
• In a bowl, make a paste of dry powdered spices, ginger, onion and garlic
• In this pan, heat some mustard oil and temper with mustard, green chillies and kalonji. Add the masala paste and cook for 5 minutes
• Stir well
• Add water and cook for 5 minutes
• Add the vegetables and the fish
• Cover and let it simmer for the next 5 minutes
• Cover it with lid and cook for 2-3 more minutes
• Finish with coriander
• Serve with lime and green chilli
For Tempering
Ingredients:
• Black mustard (rye)
• 3 green chillies
• 1 tsp kalonji
