THAI SPICED PARATHA WITH PICKLE
The term paratha comes from Parat and Atta, literally translating to layers of dough. There are endless variations for its techniques and fillings, here we give it a Thai twist.
Preparation time: 30 minutes (Serves 2)
Ingredients:
• 2 cups wheat flour
• ½ cup cheese (grated)
• 1 cup potatoes (boiled)
• 1 tbsp coriander (chopped)
• 1 inch ginger (minced)
• 1 tsp garam masala
• 2 green chillies
• 2 tsp Thai green paste
• 1 cup ghee
• 1 tsp cumin powder
Salt as require
Preparation:
• Heat ghee and sauté the green curry in it
• Remove from the heat
• Add boiled potatoes, fresh coriander, ginger, garam masala, cheese and cumin powder
• Make small dough balls with the wheat flour
• Make a dent in the balls and fill them with potatoes and cheese mixture
• Flatten the dough sheet and heat on griddle on both sides
• Serve with pickle and white butter.
