MAAH DAAL DOABA
Daal is one of the most popular side dishes in asian cuisines. Maah Daal is a rich, tasty recipe from the Doaba region in Punjab.
Preparation time: 60 minutes (Serves 2-3)
Ingredients:
• ¾ cup black urad daal
• 2 tbsp chana daal
• 2 tbsp kidney beans (rajma)
• 1 inch ginger (minced)
• 3 green chillies (chopped)
• ¼ cup tomato puree
• 2 onions (chopped)
• 6 cloves garlic (minced)
• ½ cup butter (churned fresh)
• 2 tbsp coriander fresh (chopped)
• 2 tsp garam masala
• 2 tsp cumin powder (roasted)
• 3 tbsp ghee
Mineral salt as required
Preparation:
• Soak all the daal overnight
• Boil the daal with salt in a pressure cooker/casserole till soft
• Heat the ghee in a casserole
• Add garlic, ginger and green chillies
• Cook for 3-4 minutes
• Add onions and cook till translucent
• Add tomatoes and powdered spices
• Cook on a medium flame for 7-8 minutes
• Add the boiled daal
• Let it simmer for 20 minutes
• Adjust the seasoning
• Finish with butter and coriander
