KOFTA KADHI PAKODI
Who doesn’t swear by the comfort lunch of Kadhi Pakodi? We add to the flavour using cheesy koftas instead of usual pakodas.
Preparation time: 30 minutes (Serves 2)
For Kofta
Ingredients:
• ½ cup cheddar cheese
• 1 ½ cup cottage cheese (grated)
• 2 green chillies (chopped)
• 1 jalapeño (chopped)
• 1 onion (thinly sliced)
• 1 tbsp fresh coriander
• 4 tbsp cup panko powder
• 1 tbsp almonds (blanched and chopped)
• 1 tbsp pistachios (blanched and chopped)
• 3 tbsp figs puree
• 1/3 tsp ajwain
• ½ tsp cumin powder
• ⅓ tsp cardamom powder
• Black pepper as required
• Oil to fry
Salt as required
Preparation:
• In a big plate, mash cheese with hands
• Mix both the chillies, onions, nuts, figs, ajwain,
cumin and cardamom powder
• Add panko crumbs and season
• Mix to form a dough-like mass
• Let it rest in a cool place
• Form small dumplings
• Fry in moderate heat till golden brown and crisp
For Kadhi
Ingredients:
• 1 cup yoghurt
• ¼ cup besan
• 2 cups water
• 1 tsp mustard seeds
• 10 curry leaves
• 1 tsp turmeric
• 1 tsp red chilli powder
• 3 red chillies dried
• 2 tbsp sesame oil
Salt as required
Preparation:
• In a bowl, add yoghurt and besan
• In mustard oil, crackle mustard seeds and red chillies
• Add turmeric, red chilli powder, curry leaves and stir for a minute
• Stir it in the mixture of besan and yoghurt
• Add 4 cups of water and let it simmer for 25 minutes on a slow flame
• Adjust the seasoning and remove from heat
• Add koftas in kadhi and cover for 3-4 minutes Serve hot
