KOSAMBRI PRASADAM
Kosambri Prasadam is a classic south indian salad that brings together soaked Bengal gram and green gram. The flavour is enriched by adding fresh coconut and grated or finely chopped vegetables. This salad forms an important part of most south indian festivals.
Preparation time: 20 minutes (Serves 2)
Ingredients:
• 2 tbsp yellow moong dal (soaked overnight)
• 2 tbsp chana dal (soaked overnight)
• ½ cucumber (peeled and diced)
• 1/3 fresh coconut (grated)
• 1 ginger (chopped small 1 inch)
• 1 green chilli (chopped)
• 2 tbsp fresh coriander
• 2 carrots (grated)
• 1 lime juice
Mineral/black salt as required
Preparation:
• Heat coconut oil and add mustard seeds, red chillies and curry leaves
• Add asafoetida and take it off the flame
• Wash the soaked daal, add all the components of the salad (cucumber, carrots, lime & fresh coconut) to the warm tempering and mix well
· Serve cold
For Tempering
Ingredients:
• 1 tsp mustard seeds
• 2 tsp coconut oil
• Pinch of asafoetida
• 8 fresh curry leaves
• 1 dried red chilli (split into 3 pieces)
