ROASTED SWEET POTATOES & BRANDY BRAISED APPLE SAUCE WITH WALNUTS & CRANBERRIES CHUTNEY
Inspired by the Delhi sweet potato chaat, this dish has roasted sweet potatoes paired with a tangy, boozy apple sauce.
Preparation time: 40 minutes (Serves 2)
For Walnuts & Cranberries Chutney
Ingredients:
• ½ cup walnuts
• ½ cup yoghurt
• 4 tbsp cranberries dried
• 1 tbsp coriander roots
• 1 tbsp brown sugar
Mineral salt as required
Preparation:
• Grind walnuts with sugar and yoghurt
• Add chopped cranberries and chopped coriander roots
• Mix well with a spoon
For Salad
Ingredients:
• 2 apples
• 1 sweet potato baked with skin
• 1 bay leaf
• 1 cinnamon
• 60 ml red wine
• 20 ml brandy
• 2 tsp brown sugar
• 5 black peppercorns (cracked)
• 2 tbsp butter
• 15 baby rockets
Mineral salt as required
Preparation:
• Skin and braise apples in butter, bay leaf, cinnamon, wine, brandy and brown sugar
• Cover and cook for 5-6 minutes, reserve the liquor
• Remove from heat, allow it to cool and blend
• Roast sweet potato in oven for 30 minutes
• Remove from oven, cut into wedges and grill
• Season with mineral salt and pepper
• On a plate spoon chutney or apple sauce or both drizzle with liquor
